The temperature in Coffee mode is below boiling (~96 C) ; in Steam mode it's over boiling (~115 C) so the water boils off into steam and froths your milk. You can cool the machine off faster by running water out the steam wand. It will sputter a little, but once the boiler cools below 100 C, the water sill come out smoothly.
