I have used the bread machine, and now I'd like some different recipes to try. I noticed that the ones in the book all seem to use 'vital wheat gluten' -- what is it? is it necesary?

0 Gluten improves the texture of lower gluten flours such as whole wheat or oat, etc. Helps make a lighter loaf. You can get it at the grocery store or health food market.
