My pastries and cakes are drying out and cooking too fast. Do you have a chart to use to make proper adjustments in recipies?

0 My pastries and cakes are cooking too fast and are dry. Do you have a chart on how I can make adjustments to my recipies or in the Temp of the oven or diffuse the fan?
