Ten yr old DeLonghi Professional electric fan oven...

Ten yr old DeLonghi Professional electric fan oven When oven is on it does not respond to the temperature gauge - it just gets hotter and hotter until it reaches about 300C then switches off after 30mins. I replaced the Oven Thermostat in 2008 - problem resolved issue. I replaced the oven thermostat in 2012- problem persists Please help!!!
