how do I change the type of bread loaf I wan't to ...

how do I change the type of bread loaf I wan't to make after I have set it up for program 1 and just want to kneed the mix. I have tried switching off and back on but it still shows recipe 1 and it will not change. I am temoted to take it back to the shop and get a different make that comes with instruction and a manual.
