Programing duration...

I want to program my oven to turn off when the temperature probe reads 140 degrees. How do I program? Gaggenau eb270/271-6

0 Seems OK to put most of the removable parts, rack, grease filters etc in ther dishwasher. Manual says to spray household cleaing product on the interior and then use the cleaning setting. Looking for advice on best / safest oven cleaner to use. Thanks
