What are the two pans for? One is metal & the other is ceramic..

5 This unit is a duel roasting/slow cooked. The metal (enamel) insert is used for roasting meat on the high setting. The ceramic insert is used for slow cooking. Remove the enamel insert when slow cooking in the ceramic insert. Hope this helps you.
