That's 3 hours and 40 minutes for an 11 pound defrosted turkey And 1 hour and 50 minutes to 2 hours and 45 minutes for an 11 pound fresh turkey. However, you should judge when your turkey is done cooking by taking its temperature rather than by looking at the clock. There are far too many variables for any recipe to be able to accurately predict exactly how long your bird will take. And 5 or 10 degrees is enough to make the difference between a perfect turkey and one that’s over- or under-cooked. USDA recommends 165 degrees
