I found that 3 hrs 25 mins for a 1kg Light loaf developed a very thick crust. I now use 2 tbsp sugar, 1 tsp salt, 2 tbsp olive oil, 3 cups flour, and same qty of yeast and liquid but BAKE for 3 hours. Same order of adding liquid and dry ingredients as manual.

0 Is that the manual for the 41061z? I can't find that anywhere! Could you maybe scan some of the basic recipes? Or just write them down
