need to replace thermostat on a Tappan gas oven/br...

need to replace thermostat on a Tappan gas oven/broiler model #12-2299-10/06 and would like to familiarize myself with the unit and know what im looking for it before i just go tearing it apart and messing-up the mans kitchen for days. I've done installs and replaced igniter, but I've never a thermostat.
