For each pancake, pour ¼ cup batter onto the preheated griddle.
Cook 2 to 3 minutes, or until bubbles have formed on top and
bottom is lightly browned. Turn pancakes and cook other side until
done, about 3 more minutes. Repeat with remaining batter.

Smoked-Bacon and Manchego Frittata
Frittatas are a great alternative to traditional omelets. Try this
one – you will not be disappointed.
Makes 10 servings
5 slices applewood-smoked bacon, cut into small dice
½ large red bell pepper, cut into ½-inch pieces
¼ large red onion, cut into ½-inch pieces
10 large eggs
¼ cup heavy cream
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
nonstick cooking spray
4 ounces manchego, shredded
8 green onions, chopped
Preheat oven to 375°F.
Combine bacon, red pepper and red onion in a small microwave-
safe bowl. Cover with a paper towel and cook in a Cuisinart
®
microwave on High for 10 minutes.
While the bacon and vegetables are cooking, put the eggs, cream,
salt and pepper into the jar of your Cuisinart
®
PowerEdge

Blender. Add the cooked bacon/vegetable mixture. Auto Pulse on
Low for 8 to 10 seconds, or until combined.
Liberally spray a 12-inch sauté pan with nonstick cooking spray.
Add the blended egg mixture to the pan; top with the manchego
and onions. Place the filled pan in the preheated oven; bake for 25
minutes. After baking, let frittata sit for 5 minutes before slicing and
serving.

Whole-Wheat Apple Cinnamon Waffles
The nuttiness of whole-wheat flour comes to the forefront in this
comforting waffle.
Makes about 12 servings
2 tablespoons unsalted butter
2 apples, peeled, cored and cut into ¼-inch dice

¾ teaspoon pure vanilla extract
¼ cup unsalted butter, melted and cooled, divided
2 large eggs, lightly beaten
1 cup whole-wheat flour
1 cup unbleached, all-purpose flour
3 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon table salt
½ teaspoon ground cinnamon
nonstick cooking spray
Put 2 tablespoons of the butter into a small sauté pan and set over
medium heat. Once melted, add the diced apples. Let cook until
browned and softened, about 4 minutes. Reserve.
