Berry Coulis
Fresh fruit sauce for ice cream,
chocolate cakes...
Ingredients:
½ cup of fresh raspberries
½ cup of fresh strawberries
¾ cup of sugar
Process the fruit pulp and the sugar in the
VillaWare
®
Blender, and then strain the fruit
mix with a sieve.
Pour the fruit mix in the VillaWare
®
Kettle double boiler, and cook for 5-10
minutes until the sugar melts and thickens.
Refrigerate for up to a week
Compound Herb Butter
This sauce is very versatile, you can brush over
grilled steak, chicken, sh, pork, or even pasta.
Ingredients:
2 sticks of unsalted butter
Leaves of 3 rosemary sprigs
3 leaves of sage
4 sprigs of thyme leaves removed off
of stem
3 cloves of peeled garlic
10 chives
Melt butter in VillaWare
®
Kettle double
boiler.
Add 3 crushed cloves of garlic and fresh
herbs to the butter, and mix them in the
VillaWare
®
Blender on high for 5 seconds.
Pour herbed butter back into double boiler
and heat for 5 minutes on high to release
the avour of the herbs.
Molten Amaretto Lava Cake
Top it with berries coulis and ice cream
Ingredients:
140 grams of unsalted butter
280 grams of semi sweet chocolate
170 grams of almond chocolate bar cut
into pieces
Pinch of salt
2 tablespoons of cocoa powder
½ teaspoon of vanilla extract
½ teaspoon of almond extract
2 tablespoons of amaretto liqueur
½ cup of sugar, plus 3 tablespoon
175 grams of egg whites (approximately,
5 large eggs)
½ teaspoon of lemon juice
3 tablespoons of melted butter
Butter 6 ramekins and dust with 3
tablespoons of sugar.
Melt Chocolate and butter together in
the VillaWare
®
Kettle double boiler for 8
minutes on high.
Stir in salt, cocoa and the extracts.
Whip egg whites with ½ a cup of sugar and
the lemon juice until medium peaks.
Fold half of the chocolate mixture into the
egg whites, and repeat the process with the
other half of the mixture.
Fill the buttered/ sugar moulds half way with
the chocolate and egg white mixture, and
add a piece of the chocolate bar. Top with 1
tablespoon of chocolate mixture.
Place the ramekins on a baking sheet and
bake at 200º C degrees for 12 minutes (if
you want a softer lava cake, bake it for only
10 minutes). Serve immediately with ice
cream and fresh berry coulis.
