Roastingiscookingby dryheat.Tendermeator

Roastingis reallya bakingprocedureusedfor
meats.Therefore,theovencontrolsaresetforBaking
or TimedBaking.(Youmayheara slightclicking

TimedBakingwillturntheovenon automatically.
Mostmeatscontinueto cookafterbeingremoved
fromtheoven.Theinternaltemperaturewillrise5 to
10degreesF.duringtherecommendedstandingtime
of 10to 20minutes.Thisallowsroaststo firmup and
makesthemeasierto carve.Tocompensatefor this
risein temperatureyoumaywanttoremovetheroast
sooner(at5 to 10degreeslessthanshownin the
