- 2 servings (double the ingredients for 4 servings)
• 11/2pounds skinless,chicken pieces
• 1teaspoon cayenne pepper
• 11/2tablespoon paprika
• 1/2teaspoon pepper
• 1/2cup hot sauce or 1 tablespoon Tabasco sauce
• 1/2cup barbecue sauce of choice
Mix everythingin an 8 x 8-inch glass dish or similar dish and
cover with plastic wrap,
Cook on 'SpicyChicken'. Stir and serve as is or place under
a broiler for a few minutes foradditional browning.

• 1/2medium onion, chopped
• 1/2green bell pepper, diced
• 1/2cup frozen peas
• 1/2cup long grain rice
• 1cup water
• 1/2 cup salsa
• 11/2pounds skinless,chicken pieces, legs, thighs, breasts,
wings, or combination of all
• 1teaspoon cumin
• Salt and pepper to taste
• 1/2cup green olives w/pimentos
Place onions and peppers inan 8 x 8-inch glass dish or
similar container and microwave for 3 minutes,
Add peas, rice, water, salsa,chicken, and cumin.
Season with salt and pepper,
Coverwith plastic wrap and cook on 'Mexican Chicken', Stir
inthe olives and serve as is or place under a broiler fora few
minutes to add additional browning,
