Transfertoaheatproofbowlorjug;chillfor
severalhours.

2cups(500ml)thickenedlightcream
18%milkfat
1vanillabean,seedsscraped*
5eggyolks
½cup(110g)castersugar
1.Combinemilkandcreaminasaucepan.
Splitvanillabeaninhalflengthways.
Scrapeouttheseeds;addthepodandthe
seedstothesaucepan.Bringthemixture
tosimmeringpointoverlowheat.
2.Whiskeggyolksandsugartogetherfor3-4
minutes,untillightandcreamy.
3.Graduallywhiskinhotmilkmixtureinto
yolkmixtureuntilwellcombined.
4.Returnthemixtureintoacleansaucepan
andcook,stirringconstantlywithawooden
spoon,overlowheatuntilmixturethickens
andcoatsthebackofthespoon.

5.Transfermixturetoabowlandremove
vanillapod.Allowtocoolbeforeplacing
inthefridgetochillfor4-6hoursoruntil
wellchilled.
6.Positiontheicecreammakerasdirected
onpages5-6.Turnuniton;addmixture
throughthepouringhole.
7.Whenmixturehasthickenedandreaches
thetopofthepaddle,theicecreamis
completelypreparedandtheicecream
makershouldbeturnedoff.Toavoidthe
motoroverheating,theicecreammaker
mayturnitselfoffwhenthemixturehas
thickenedandisready.
