Pork, Chestnut and Basil Dim Sims
Makes: 26
500g lean pork mince
227g can water chestnuts, drained, finely
chopped
1 cup breadcrumbs
1 egg, lightly beaten
½ cup sweet chilli sauce
2 tablespoons finely chopped fresh basil
1 garlic clove, crushed
2 tablespoons sesame seeds, toasted
1. Combine pork, chestnuts, breadcrumbs,
egg, 1 tablespoon chilli sauce, basil and
garlic in a large glass bowl. Roll into balls.
2. Arrange balls in three steamer baskets.
Place lid on the basket and set timer to 10
minutes.
3. Transfer balls to a serving platter. Sprinkle
with sesame seeds. Serve with remaining
chilli sauce.
Asparagus and Beans with Crispy Bacon Crumbs
Serves: 4-6 as a side dish
2 bunches asparagus, trimmed
150g green beans, trimmed
1 tablespoon olive oil
2 rachers bacon, chopped
1 cup roughly torn bread
2 cloves garlic, crushed
1 tablespoon finely chopped fresh parsley
leaves.
1. Place asparagus and beans evenly in one
steamer basket.
2. Place lid on the basket and set timer to 15
minutes. Steam for 12-15 minutes or until
tender.
3. Meanwhile heat oil in a frypan over
medium heat. Add bacon and cook
for 2 minutes or until just brown. Add
breadcrumbs and garlic. Increase heat to
medium high. Cook for 5 minutes or until
crumbs are brown. Stir in parsley.
4. Serve asparagus with crispy bacon
topping.
