Packaging- The only brg secret to successful
freezing IS In the packaging The wrap must be air.

Rigid polyethylene containers with tight-fitting
lids. straight-sided canning freezing jars heavy-
duty alumrnum foil. plastrc-coated paper and
poiyethyiene plastrc are recommended Note
Heat-sealed bolting bags are easy to bse. and
other firms supply polyethylene bags to be used by
themselves or carton loners
Sealing - When sealing foods In bags squeeze
out the air (lrqurds need headspace to allow for
expansron) Twist the top and turn It back Fasten
tre securely around the doubled-over toll Put the
label inside transparent bags, use self-adhesive
label on outside of opaque ones
