Broilingis cookingfoodby intenseradiantheatfrom
the upperunitin the oven.Mostfishand tendercuts
of meatcanbe broiled.Followthesestepsto keep
spatteringand smokingto a minimum.
Step 1: If meathas fat or gristlenearedge,cut
verticalslashesthroughboth about2 inchesapart.
if desired,fat maybe trimmed,leavinglayerabout
1/8inchthick
Step2:Placemeat onbroilerrack inbroilerpan.
Alwaysuserack so fat dripsintobroilerpan;
otherwisejuices may becomehotenoughto catchfire.
Step 3: Positionshelfonrecommendedshelfposition
as suggestedin BroilingGuide.Mostbroilingis
doneon C position,butif yourrangeis connectedto
208 Volts,you may wishto use a higherposition.
Step4: Leavedoor ajara few inches.Thedoor stays
openby itself,yet propertemperatureis maintainedin
the oven.
Step 5: Press13R01Lpad.
Step6: SelectLO Broil(450”F.)by tapping
INCREASEpad once.SelectHI Broil(550°F.)by
tappingINCREASEpadtwice.
TochangefromHI Broilto LO Broil,pressthe
BROILpadthentap DECREASEpadonce.

Youcanuse ah.u-ninumfoilto lineyourbroilerpan andbroilerrack. However,
you mustmoldthe foil tightlyto therack and cutslitsin itjust liketherack.
Withoutthe slits,the foilwill preventfatand meatjuices fromdrainingto the
broilerpan.Thejuices couldbecomehotenoughto catchonfire. If you do
not cutthe slits,you are frying,notbroiling.

always use a rack in the pan?
A. Yes.Usingthe rack suspends
the meatoverthe pan. As the meat
cooks,thejuices fall intothe pan,
thuskeepingmeatdrier.Juicesare
protectedby the rack and stay
cooler,thuspreventingexcessive
spatterand smoking.
Q. Should 1salt the meat before
broiling?
A..No. Saltdraws out thejuices
and allowsthemto evaporate.
Alwayssaltafter cooking.Turn
meat withtongs;piercingmeat
with a fork also allowsjuices to
