• To conserveenergy,avoidfrequentor prolongeddooropenings. Atthe end of
cooking,turnovenoffbefore removingfood.
• Alwaystestfordoneness(fingertip,toothpick,sidespullingawayfrompan). Donot
relyontime orbrownnessas onlyindicators.
• Usegoodqualitybakingpans andthe size recommendedin the recipe.
• Dull,dark,enameledorglasspanswillgenerallyproduceabrown,crispcrust.Shiny
metalpans producea light,goldencrust.
• Forconventionalbaking,cookiesheetshouldbe withoutsidesandmadeof shiny
aluminum. The bestsize to usa is 14" x 12".
