800gcancrushedtomatoes
50gbutter
¼cupplainflour
3cupsmilk
200gmozzarellacheesegrated
50gparmesancheesegrated
4freshlasagnesheets
Saltandfreshlygroundblackpepper,totaste
1.Preheatovento200°C.Grease2baking
trayswithoilspray.
2.Usingthevariableslicingbladeto4mm,
processeggplantlengthwaysinthelarge
chutetoformthinlongslices.Repeatthis
processwithzucchini,sweetpotatoand
redonion.
3.Spreadslicedvegetablesoverbakingtrays
andbakefor20-25minutesoruntilgolden
andtender.
4.Usingtheprocessingbowlfittedwiththe
universal‘s’bladeprocesscapsicum,semi
driedtomatoes,basilandcrushedtomatoes
untilasmoothpaste.Seasontotastewith
saltandpepper.
5.Inamediumsaucepanmeltbutter.
Whiskingaddflourtoformapaste.
Slowlyaddmilk,stirringconstantlyto
preventlumpsforming.Cookuntilsauce
hasthickened.Removefromheatandstir
throughmozzarella.
6.Inagreasedbakingdishlayerroasted
vegetables,tomatosauce,whitesauceand
lasagnesheets.Repeat.Topwithalayerof
whitesauceandparmesancheese.
7.Placeinovenandbakefor20-30minutes
oruntilcheeseismeltedandlasagne
sheetsarecooked.
