CORN MEAL WAFFLES
1-1/2 cups corn meal
1-1/2 cups self-rising flour
1/4 cup sugar
3 large eggs, lightly beaten
1-1/2 cups milk
1/3 cup butter, melted
1 can whole kernel corn, drained (8-3/4 ounces)
Lightly grease and preheat the Waffle Baker. In a large mixing bowl,
with a wooden spoon, combine the corn meal, flour, and sugar. Make
a well in the center of the mixture. Set aside. In a medium bowl, with
an electric mixer on low, combine the eggs, milk, and butter. With a
wooden spoon, add the egg mixture and corn to the dry ingredients,
stirring just until moistened. Pour batter onto the center of each
waffle section of the Grid Surface. Close the Lid and bake and repeat
with the remaining batter. Excellent topped with fresh fruit, chili and
cheese, or your favorite savory entrée.
