Makes about 2½ cups
1. Insert the chopping blade into the work bowl of the
food processor. Add the parsley, lemon zest, salt and
garlic and process to chop, about 10 seconds. Scrape
down the sides of the bowl and repeat. Add remain-
ing ingredients and process until smooth, about 5
minutes, stopping to scrape down the sides of the
bowl as needed.
2. For serving, transfer hummus to a shallow bowl. Make
a slight indentation in the center of the dip and  ll
with the remaining tablespoon of oil. Sprinkle the
paprika and za’atar, if using, over the oil.
