a. Never leave surface units unattendedat highsettings. Boilovers cause smoking and greasy spillovers that may ignite.Heat oils slowly on low
or mediumsettings.
b. Always turnhoodON when cooking at highheat or whencooking ambeingfood (i.e. Crepes Suzette, Cherries Jubilee, Peppercorn
Beef Flambe)
c. Clean ventilating fans frequently. Grease should not be allowedto accumulate on fan or lter.
d. Use properpan size. Always use cookware appropriatefor the size of the surface element.
