Roasting
Roastingiscookingbydryheat.

Roastingtemperatures,which
shouldbelowandsteady,keep
spatteringtoaminimum.When
roasting,itisnotnecessaryto
sear,baste,coveror addwater
toyourmeat.
Roastingisreallyabaking
procedureusedformeats.Therefore,
ovencontrolsaresettoBAKEor
TIMEBAKE.(Youmayheara
slightclickingsound,indicatingthe
ovenisworkingproperly.)Roasting
iseasy;justfollowthesesteps:
Step1:Checkweightofmeat,and
place,fatsideup,onroastingrack
inashallowpan.(Broilerpanwith
rackisagoodpanforthis.)Line
broilerpanwithdurninumfoilwhen
usingpanformarinating,cooking
withfruits,cookingheavilycured
meats,orforbastingfoodduring
cooking.Avoidspillingthese
materialsonovenlinerordoor.
Step2: Placeinovenonshelfin
AorBposition.Nopreheatingis
necessary.
Step4:Mostmeatscontinueto
cookslightlywhilestanding,after
beingremovedfromtheoven.For
rareormediuminternaldoneness,
ifmeatistostand10to20minutes

meatfromovenwheninternal
