SECTION 5: CLEANING &
SANITIZING
Always be as thorough as
possible when cleaning
and sanitizing the saw and
its parts. Any surface that
has been exposed to raw
meat or bone may develop
bacteria that could cause
illness or death if not prop-
erly cleaned and sanitized.
Cleaning saw while it is
connected to power could
cause severe electrical
shock or death. ALWAYS
disconnect saw from power
before cleaning and sanitiz-
ing. DO NOT reconnect it
to power until all parts are
completely dry.
Cleaning Saw
To clean the saw and prepare for sanitizing:
1. Prepare a clean and sanitized area for plac-
ing parts as you remove them from saw.
2. DISCONNECT SAW FROM POWER!
3. Remove saw blade (refer to Blade Change
on Page 14 for detailed instructions).
4. Lift the upper wheel up to remove it from
bracket (see Figure 10).
If you are not familiar with
safe meat handling tech-
niques, contact your local
Board of Health or the
USDA for proper sanitizing
procedures.
