Section 7 Important: Operator Checklist
During Cleaning and Sanitizing
ALWAYS FOLLOW LOCAL HEALTH CODES.
Cleaning and sanitizing schedules are governed
by federal, state, or local regulatory agencies,
and must be followed accordingly. If the unit
has a “Standby mode”, it must not be used in
lieu of proper cleaning and sanitizing
procedures and frequencies set forth by the
ruling health authority. The following check
points should be stressed during the cleaning
and sanitizing operations.
CLEANING AND SANITIZING MUST BE
PERFORMED DAILY.
Troubleshooting Bacterial Count
j 1. Thoroughly clean and sanitize the machine
regularly, including complete disassembly and
brush cleaning.
j 2. Use all brushes supplied for thorough
cleaning. The brushes ar e specially designed
to reach all mix passageways.
j 3. Use the white bristle brush to c lean the m ix
feed tube whic h extends from the hopper up
to the r ear of the freezing cylinder.
j 4. Use the black bristle brush to thoroughly
clean the rear shell bearing located at the r ear
of the freezing c ylinder. Be sure to have a
generous amount of cleaning s olution on the
brush.
j 5. IF LOCAL HEALTH CODES PERMIT THE
USE OF RERUN, ma ke sure the mix rerun is
stored in a s anitized, covered stainless steel
container and us ed the following day. DO
NOT prime the m achine with rerun. When
using rerun, skim off the foam and discard,
then mix the rerun with fresh mix in a ratio of
50/50 during the day's oper ation.
j 6. Properly prepare the cleaning and sanitizing
solutions. Read and follow label directions
carefully. Too strong of a solution may
damage the parts and too weak of solution
may not do an adequate job of cleaning or
sanitizing.
j 7. The temperature of the mix in the mix hopper
and walk -in cooler should be below 40_F.
(4.4_C.).
Regular Maintenance Checks
j 1. Rotate the scraper blades t o allow both s ides
of the k nife edge to wear evenly. This will
contribute to s elf-sharpening and help
maintain fast, efficient freezing.
j 2. Replace scraper blades that are bent,
damaged, or wor n down.
j 3. Before installing t he beater, be certain that the
scraper blades are properly attached over the
beater pins, and into the blade clip.
j 4. Dispose of o- rings and seals that are worn,
torn, or fit too loos ely, and replace with new
ones.
j 5. Check the r ear shell bear ing for signs of wear
(excessive mix leakage in rear drip pan) and
be c ertain it is properly cleaned.
j 6. Using a screwdriver and cloth towel, keep the
female dr ive socket and the rear shell bearing
free of lubricant and mix deposits.
