1.5.7 High Limit Test
THIS TEST SHOULD BE PERFORMED BY QUALIFIED PERSONNEL ONLY
Fryers with the solid state or electric thermostats have a three position power switch , ON/OFF/TEST.
The TEST position is used to perform the High Limit test. This test is not required for initial
installations, but should be performed as soon as possible after the installation to verify that the high
temperature shut off works.
CAUTION
This test causes the fryer to reach higher than normal temperatures that will
spoil the shortening. Perform this test with shortening that will not be reused.
a. Place the tip of the thermometer in the shortening approximately 1" above the temperature
sensors.
b. Press and hold the power switch in the TEST position. The temperature of the shortening
will exceed the thermostat setting.
c. When the temperature reaches 450°F ±15°, the high limit switch will open and turn off
the fryer. If the fryer does not turn off at 465°F, the high limit switch is defective and must
be replaced. If the limit switch opens below 420°F, it is tripping to low and should be
replaced.
d. After the limit switch trips, release the TEST switch and allow the shortening temperature
to drop. Reset the limit switch after the temperature has dropped 50°F by pressing the
reset switch. This will close the high limit switch and the fryer is ready to operate again.
e. Shut the fryer off and allow the oil to cool to 135°F before draining and cleaning the fryer.
