2.3 OPERATING INSTRUCTIONS - WITHOUT A COMPUTER
To ensure the food always comes out the very best, follow the preparation instructions for the food
you are cooking. Using the best shortening makes the best fried foods. The best shortening will last
longer than lower grade shortening and save you money. When not in use the shortening should be
cooled and covered to prevent contamination.
CAUTION
The fryer has been installed using restraining devices to prevent accidential
tipping or movement. Do not attempt to move the fryer when it has hot liquid
in it. Splashing hot liquids can cause severe burns.
WARNING
Water and shortening DO NOT mix. Keep liquids away from hot shortening.
Dropping liquid frozen food into the hot shortening will cause violent boiling.
2.3.1 Fryer Start-Up
DO NOT START FRYER WITHOUT FILLING WITH OIL!
a. Light the pilot light as described in section 1.5.2.
b. Turn the temperature control knob (thermostat) to the desired temperature setting. This
knob is located behind the front doors or on the front control panel.
c. On fryers with solid state or electric controls, turn the
fryer ON by pressing the ON/OFF/TEST button. The
POWER ON light and the HEATING light will come
on. The HEATING light cycles with the main burn-
ers. If you have the melt option, place the melt option
switch in MELT ON. If the temperature is less than
150°F, the burners will come on and cycle until the temperature reaches 150°F.
2.3.2 Automatic Basket Lifts (OPTIONAL)
Before using the basket lifts, ensure that the shortening is up to normal operating temperature.
a. Set the timer to the desired time and press the center button and release. The basket will
lower into the shortening. When the time is up, the basket will automatically rise out of
the shortening.
b. The timers for each fryer can be set independent of each other to allow for greater frying
flexibility.
