2.2 MELTING SOLID SHORTENING
Fryers equipped with a melt cycle feature will automatically melt the shortening. If your fryer does
not have a melt cycle, follow the manual procedures in section 2.2.2.
2.2.1 Automatic Shortening Melting
a. Place the Melt Cycle ON/OFF switch in the ON
position.
b. Place the fryer ON/OFF/TEST switch in ON.
c. The fryer will cycle the burner on for 4 seconds and
remain off for 30 seconds. This will heat the short-
ening slowly to 150°F (65°C). At 150°F the burners
will remain on constantly until the shortening reaches
the thermostat setting.
d. The Melt Cycle switch can be left ON after reaching
normal temperature. The fryer is now operating normally and ready to use.
2.2.2 Manual Shortening Melting
NOTICE
The melting procedure below requires the manual cycling of the fryer. Watch
carefully for smoke. If smoke is noticed, the shortening is scorching. To
prevent this, decrease the time you leave the burners on.
a. Place the fryer ON/OFF/TEST switch in ON for 4
seconds.
b. Place the fryer ON/OFF/TEST switch in OFF for
30 seconds.
c. Continue cycling the ON/OFF/TEST switch until most of the solid shortening is liquefied
and the temperature reaches 150°F. At 150°F leave the ON/OFF/TEST switch in the ON
position. The burners will remain on constantly until the shortening temperature reaches
the thermostat setting.
d. Once at temperature, the fryer is now operating normally and ready to use.
