Pizza Dough
Makes 2 thin pizzas or 1 thick pizza
2teaspoons(7g)dryyeast
1teaspoonsugar
¾ cup warm water
2tablespoonsoliveoil
2cupsplainflour
½teaspoonsalt
1.Combineyeast,sugarandwarmwaterina
bowl.Stirtocombine.Covermixtureand
standinawarmplacefor5minutesuntil
frothy;addoil.
2.Usingtheprocessingbowlfittedwiththe
doughblade,processflour,saltandyeast
mixtureonspeed1untilmixtureformsa
dough(about10-15seconds).
3.Removedoughblade.Turndoughontoa
flouredsurfaceandkneadforabout8-10
minutesoruntilthedoughisfirmand
elastic.Placedoughinalightlygreased
bowl.Coverwithplasticwrapandallowto
restinawarmplacefor20-30minutesor
untildoughhasdoubledinsize.
4.Meanwhile,preheatovento240°C(220°C
fan-forced)
5.Usingyourfist,punchdowndough,fold
sidestocentreandturndoughover.Place
doughontoaflouredsurfaceandlightly
kneaduntilsmooth.
For a thin pizza crust: Halvedough.Roll
doughouttoabouta4-5mmthicknessand
placeonto2oiledpizzatrays.
For a thick pizza crust:Pressdoughontoan
oiledpizzatrayandallowtorestinawarm
placeuntildoughhasrisenagain.
6.Spreadwithpizzasauceandassorted
toppings.
7.Bakefor10-15minutesoruntilcrisp.
Roast Pumpkin Soup Serves 4-6
1.5kgpumpkin,cutinto3cmpieces
2tablespoonsoliveoil
salt and pepper, to taste
20gbutter
1onion,chopped
1litrechickenstock
Creamorsourcream,toserve
1.Preheatovento200°C(180°Cfan-forced)
2.Placepumpkinonabakingtrayanddrizzle
with1tablespoonoil.Seasonwithsaltand
pepper.Bakefor35-40minutesoruntil
tender.
3.Heatremainingoilandbutterinalarge
saucepanovermediumheat.Addonion
andcookuntilsoft.
4.Addpumpkinandstockandbringtoaboil.
Reduceheat,simmer,uncovered,for10
minutes.Removefromheatandallowto
cool to room temperature (Do not process
hot soup).
5.Usingtheprocessingbowlfittedwiththe
choppingblade,processcooledsoupin
batchesuntilsmooth.
6.Returnsouptosaucepan.Reheatuntil
soupishot.
7.Servewithcream,ifdesired.
