3mediumleeks,whitesonly
1tablespoonoliveoil
2smallrashersbacon,chopped
1kgpotatoes,peeledandchopped
2litreschickenorvegetablestock
Salt and pepper, to taste
Shavedparmesancheese,toserve
1Usingtheprocessingbowlfittedwiththe
bladeholdingdisk(fittedwiththethick
slicingblade),feedtheleekthroughthe
feedtubeusingthefoodpusher.
2Heatoilinalargesaucepanovermedium
heat.Addbaconandcook,stirring
occasionally,untilcrisp.Removefrompan.
3Addleeksandcook,stirringfor5minutes
oruntilsoft.Addpotatoesandstockand
bringtoaboil.Reduceheat,simmer,
uncovered,for35-40minutesoruntil
potatoesaretender.Removefromheatand
allowtocooltoroomtemperaturebefore
processing(Do not process hot soup).

1tablespoonvinegar
2x400gcansredkidneybeans,rinsed,
drained
