Lamb Shanks with Lemon and Dill
Serves: 4
Menu: Slow Cooker
4 lamb shanks
¼ cup plain flour
¼ cup olive oil
2 cloves garlic, crushed
2 onions, chopped
¾ cup chicken stock
4 fresh dill sprigs
1 lemon, finely sliced
2 tablespoons lemon juice
Salt and freshly ground black pepper, to taste
Fresh dill, to serve
1. Dust lamb shanks in flour.
2. Press MENU and select BROWN. Press
START. Add half of the oil and preheat for
2 minutes.
3. Add lamb cooking for 3-4 minutes or until
golden. Remove from pan.
4. Press STOP. Press MENU and select
SAUTE. Press START. Add remaining oil,
garlic and onion. Cook for 4-5 minutes or
until tender.
5. Add shanks, stock, dill and lemon slices
and lemon juice to the pan. Press STOP.
Secure the lid.
