Dehydration mode can only be used in the

pper oven.

ow Dehydration mode works:
T
his feature
allows for slowly drying out food for preserva-
tion and other cooking uses.
The Wolf accessory dehydration racks (not
included with the oven) are required for this
mode. This mode is suitable for drying a
variety of fruits, vegetables, herbs and meat
strips.
Refer to the Dehydration Guide on page 25.
Use cooking times as a guide for other similar
foods.

For Dehydration mode:
Do not preheat when using
Dehydration
mode
.
Multiple racks can be used simultaneously.
Some foods require as many as 14 to 15
hours to fully dehydrate.
Consult a food preservation book for
specific times and handling of various
foods.

or Dehydration mode:
1)
Place food in oven on dehydration racks.
2)
Place door stop supplied with accessory
package in proper position to keep oven
d
oor open. Refer to instructions provided
with the accessory kit.
3)
Touch
DEHYD
4)
Oven preset temperature is 135˚F (55˚C).
To change the temperature setting, immedi-
ately touch another temperature (110˚F to
160˚F (45˚C to 70˚C)) using the number
pads.
5)
Leave food in the oven until completely dry
to the touch.
6)
Remove food from racks before completely
cool for easy removal. If excessive sticking
occurs, place dehydration trays back in the
oven to warm slightly for easier removal.
7)
Touch oven
OFF
to end this mode.
Foods must be dried to below .60 water
activity or dry to the touch to be safely
stored with no danger of mold, yeasts or
bacteria gr
owing. When in doubt, dehy-
drate for the maximum time specified.

The Wolf accessory
dehydration racks
are required when
using Dehydration
mode.
