3. Allow mixture to cool slightly.
4. Using the blender attachment, carefully
transfer slightly cooled mixture in two
batches into blender jug. Process for
about 2 minutes on speed 3/BLEND or
until soup is smooth.
5. Return soup to saucepan, add lemon
juice and season with salt and pepper.
Bring soup to a simmer before serving.
Garnish with sour cream and chives
and serve.
