Section 7 Important: Operator Checklist
During Cleaning and Sanitizing
Cleaning and sanitizing schedules are governed by
your State or local regulator y agencies and must be
followed accordingly. The following check points
should be stressed during the cleaning and sanitizing
operations. CLEANING AND SANI TIZI NG MUST BE
PERFORMED EVERY 14 DAYS.
ALWAYS FOLLOW LOCAL HEALTH CODES.
Troubleshooting Bacterial Count
j 1. Thoroughly clean and sanitize t he machine
regularly, including complete disassembly and
brush cleaning.
j 2. Use a ll the brushes supplied for thor ough
cleaning. The brushes are specially designed to
reach all the mix passageways.
j 3. Use the white bristle brush to clean the mix inlet
hole which extends from the mix hopper down
to the r ear of the freezing cylinder.
j 4. Use the black bristle brush to thoroughly clean
the rear s hell bearing located at the rear of the
freezing cylinder. Be sure to have a generous
amount of cleaning solution on the b rush.
j 5. Pr operly prepare the cleaning and sanitizing
solutions. Read and follow the label directions
carefully. Too strong of a solution may damage
the parts and too w eak of a solution will not do
an adequate job of cleaning or sanitizing.
j 6. Em pty all syrup from the tanks and discard at
least once a week.
j 7. Thoroughly clean and sanitize the syrup lines at
least once a week.
j 8. Th e temperatur e of the mix in the mix hopper
and the walk--i n cooler should be below 40_F.
(4.4_C.).
Regular Maintenance Checks
j 1. Rotate the scraper blades to allow both sides of
the knife edge to wear evenly. This will
contribute to s elf--s harpening and help maintain
fast, effic ient f reezing.
j 2. Replace scraper blades that are bent,
damaged, or wor n down.
j 3. Before installing beater, be certain that the
scraper blades are properly attached over the
beater pins.
j 4. Check the rear shell bearing for signs of wear
(excessive mix l eakage in rear drip pan) and be
certain it is properly cleaned.
j 5. Using a screwdriver and cloth towel, keep the
rear shell bearing and the female hex drive
socket clean and free of lubric ant and mix
deposits.
j 6. Dispos e of o--r ings and s eals if they are w orn,
torn, o r fit too loosely, and replace with new
ones.
j 7. Follow all lubricating procedures as outlined in
“Assembly”.
j 8. On air--cooled units, check the condenser for
accumulation of dir t and lint. A dirt y condenser
will reduce the efficiency and capacity of the
machine. The condenser should be cleaned
monthly with a sof t brush. Never use
screwdrivers or other metal probes to clean
between the fins.
Note: For machines equipped with an air filter,
it will be necessary to vacuum clean the filters
on a monthly schedule.
j 9. On water cooled units , check the water lines for
kinks or leaks. Kinks can occ ur w hen the
machine is moved back and fort hfor cleaningor
maintenance purposes. Deteriorated or
cracked water lines should be replaced only by
an authorized Taylor mechanic.
