FRIED POTATO BALLS
4 medium size potatoes
1/2 cup grated Cheddar cheese
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 cup sifted bread crumbs
7 cups oil
Flour
2 tablespoons cream
2 tablespoons butter
2 beaten egg yolks
1/2 teaspoon baking powder
1 egg beaten
2 tablespoons water
1. Pour 7 cups of oil into deep fryer.
2. Preheat the deep fryer to 380°F.
3. Peel and mash 4 medium size potatoes.
4. Add the following to the mashed potatoes: 2 tablespoons butter,
2 tablespoons cream, 1/2 cup grated Cheddar cheese,
2 beaten yolks, 1 teaspoon salt, 1/2 teaspoon baking powder
and 1/2 teaspoon cayenne pepper.
5. Whip these ingredients until they are light.
6. Shape them into 1 inch balls.
7. Mix together 1 beaten egg and 2 tablespoons of water. Set aside.
8. Roll the balls in flour, then cover in the egg and water mixture.
9. Roll the balls in sifted bread crumbs.
10. Fry for 6 minutes.
11. Drain them on absorbent paper and serve at once.
YIELD: 4 SERVINGS
