FRITTER BATTER FOR VEGETABLES, MEAT AND FISH
1 and 1/3 cups all-purpose flour
1 tablespoon melted butter
1 teaspoon salt
2 beaten egg yolks
1/4 teaspoon pepper
3/4 cup flat beer
2 stiffly beaten egg whites
1. Put in a bowl and mix well the flour, butter, salt, beaten egg yolks
and pepper.
2. Gradually add the flat beer, stirring constantly.
3. Cover and refrigerate 3 to 12 hours.
4. Just before using, you may add 2 stiffly beaten egg whites.
BOUND BREADING
1 cup all-purpose flour, finely sifted dry bread crumbs
or finely crushed corn flakes
1 teaspoon salt
1/4 teaspoon pepper or 1/2 teaspoon paprika
1. Mix all ingredients.
YIELD: ENOUGH TO COAT ABOUT 2 CUPS OF FOOD
