4. DOSING AND TAMPING
BARISTA TRAINING
Your Dualit coffee machine comes with a 7g measuring
spoon/tamper (20).

One filled level spoon provides the perfect dose of
ground coffee for a single espresso shot.
••
The tamper at the other end of the spoon is used to
create a level surface on the coffee.
••
Compacting the coffee firmly and uniformly (but not
too tightly) forces the water through the coffee
grounds in a way that extracts the best flavour.
A good barista will tamper by pressing the grounds
gently without tapping the filter holder (7), then
twisting slightly to 'polish' the surface of the
compacted coffee.

Tamping is essential because the water is forced
through the coffee at very high pressure and will
instinctively find the path of least resistance.

If the grounds have been tamped firmly and evenly,
the water has no choice but to flow through uniformly,
hence extracting the maximum flavour.

Grounds on the edge of the filter holder will break
the seal and adversely affect extraction of the coffee,
so make sure you wipe the edge of the filter clean
each time, If you don't water may leak from the
brewhead.
