Garlicky Oven-Roasted Turkey Breasts
2 turkey breasts, skin and ribs attached, about 4-5 pounds each
1 teaspoon salt
1 teaspoon black pepper

cup (1 stick) unsalted butter, melted

cup olive oil
2 bulbs garlic
Adjust oven rack to position 2. In Dacor Guide, select Turkey Breast, Bone-in. Place on a flat oven roasting rack inside of a roasting
pan or cookie sheet. Season with salt and pepper. In a small bowl, mix butter and olive oil. Cut off the top

⁄3 of the garlic heads; do
not peel. Brush butter mixture over cut garlic heads and turkey breasts. Reserve about 2 Tablespoons of butter mixture. Place garlic
alongside turkey breasts on cookie sheet. Place in oven and set timer for 30 minutes. Insert meat probe in turkey breast and set
internal temperature to 170˚. After 30 minutes, remove garlic. Allow bulbs to cool. Squeeze cloves into leftover butter mixture. Brush
mixture onto turkey during the last 30 minutes of cooking when it reaches about 155˚. Roast until internal temperature in turkey
breast reaches 170˚ and skin is crispy and brown. Let garlic cool slightly then squeeze garlic cloves out of bulb into butter mixture.
Stir to mix. Brush garlic mixture onto turkey breasts.
After Roasting: Allow to rest for 10-15 minutes. Slice and serve.
