outdoorscan nowbe preparedindoorswithless fuss and greatflavor.
The followingsuggestionsare goodrulesto followand willincreaseyourenjoymentof
the equipment.
• Be sureto followdirectionson page 18 for usingthe grill.
• Suggestedcookingtimesand controlsettingsare approximateduetovariations
in meats. Experiencewillquicklyindicatecookingtimesas wellaswhichsettings
workbest.
• For best results,buytop grademeat. Meat that isat least_ inchwillgrillbetter
thanthinnercuts.
• Scorefat on edgesof steak,but do notcut intomeat, to preventcurlingwhile
cooking.
• Fortheattractive"branded"lookonsteaks,be suregrillis preheated.Allowone
sideofmeattocooktodesireddoneness,oruntiljuicesappearonthetopsurface,
before turning. Turn steaks and hamburgersjust once. Manipulatingfood
causeslossof juices.
• When bastingmeats or applyingsauces to foods, rememberthat excessive
amountswind up insideyour grilland do not improvethe food flavor. Apply
saucesduringthe last15 to 20 minutesof cookingtime unlessrecipespecifies
otherwise. Plus, any time a sugar-basedmarinade, (for example, barbecue
sauce)isgoingto be used,the gratesshouldbe"seasoned"priorto preheating.

• Thereare manymeatmarinadeswhichwill helptenderizelessexpensivecutsof
meatfor cookingonthe grill.
• Certainfoods,suchas poultryand non-oilyfish,mayneedsomeextrafat. Brush
withoil or meltedbutteroccasionallywhile grilling.
• Usetongswith longhandlesorspatulasfor turningmeats. Do notuse forksas
thesepiercethe meat, allowingjuices to be lost.
• To helpretainmeatjuices,salt afterturningmeat or aftercookingis completed.
Be sure the grill iscooland controlsare Off.
Grill Grates
Thesearemadefromcastaluminumandare coatedwiththeExcalibur_ nonstickfinish.
• After the grillgrates have cooled,wipe off grateswith a papertowel. Wash cool
grates (DO NOT IMMERSE HOT GRILL GRATES IN WATER) with soap or
detergentinhotwater inthesinkorwashtheminthe dishwasher.Besuretoremove
all food residuebeforecookingon thegrillgratesagain.
• Removestubbornspotswitha plasticmeshpufforpad. Forbest results,use only
thosecleaningproductswhichstatetheyare recommendedfor usewhencleaning
nonstick surfaces.
• Ifgratesare washedinthe dishwasher,seasonwithoil priorto grilling. (See p. 18.)
• Do not use metal brushes or abrasive scouring pads or other scrubbers intended
to clean outdoor charcoal grills. These willremovethe finish aswell asscratchthe
grates.Do not clean in the self-cleaning oven or use oven cleaners on the grates.
