Section 6 Operating Procedures
The Model 5454 has a 15 gallon (56. 9 lit er) storage
container and a7 quart(6.6 liter) freezing cylinder. The
mix is pumped up to the freezing cylinder by a coaxial
air/mix pump located in the front, lower mix cabinet.
The freezer has a three-flavor door.
The following procedures will show you how to
assemble the parts into the freezer, sanitize them, and
prime thefreezer with fresh mix in preparationto s erve
your first portion.
If you are disassembling the machine f or the first time
or need information to get to this s tarting point in our
instructions , turn to page 33, “Disassembly”, and start
there.
Freezing Cylinder Assembly
BE SURE THE POWER SWITCH IS IN THE
“OFF” POSI TION. CHECK TO MAKE SURE NO
LIGHTS ARE LIT ON THE CONTROL PANEL.
Note: When lubricating part s, use an approved food
grade lubr icant (example: Taylor Lube).
Step 1
Install the drive shaft. Lubricate the groove and shaft
portion on the beater drive shaft. Slide the seal on the
shaft and over the groove until it snaps into place. DO
NOT lubr icate the hex end of the drive shaft. Fill the
inside por tion of the s eal with 1 /4” more lubricant and
evenly lubricate the end of the seal that fits onto the
rear shell bearing.

Install the drive shaft through the rear shell bearing in
the freezing cylinder and engage the hex end firmly
into the gear box coupling. Be sure the drive shaft fits
into the drive coupling without binding.

Step 2
Install the beater assembly. First check the scraper
blades for any nicks or signs of wear. If any nic ks are
present, replace both blades. If the blades are in good
condition, place the rear scraper blade over the rear
holding pin o n the beater.
