Fillets of Sole (5 oz llets) 12 lbs 8 oz
Salt 1/2 cup
Ground Black Pepper 2 tbsp
Eggs, Lightly beaten 2 doz
Milk 1 qt
Dry Bread crumbs 1 gal
Butter 3 lbs 2 oz
Oil 3 cups
Lemon Juice to taste
1. Season sh llets with salt and pepper.
2. Combine egg and milk, dip sh into the mixture.
3. Heat butter and oil in braising pan at 350°F.
4. Coat sh llets with bread crumbs.
5. Pan fry in shortening over moderate heat, turning carefully to brown on both sides,
until sh is aky.
6. Drain and serve immediately.
