Fillets of Sole (5 oz llets) 12 lbs 8 oz
Salt 1/2 cup
Ground Black Pepper 2 tbsp
Eggs, Lightly beaten 2 doz
Milk 1 qt
Dry Bread crumbs 1 gal
Butter 3 lbs 2 oz
Oil 3 cups
Lemon Juice to taste
1. Season sh llets with salt and pepper.
2. Combine egg and milk, dip sh into the mixture.
3. Heat butter and oil in braising pan at 350°F.
4. Coat sh llets with bread crumbs.
5. Pan fry in shortening over moderate heat, turning carefully to brown on both sides,
until sh is aky.
6. Drain and serve immediately.
